"The Lucy Goose's" Low Fat Chicken Dinner.
Ingredients:
3 boneless, skinless chicken breasts
1 cup cooked white / or brown rice
1 cup cooked carrots & broccoli or any vegetable.
1 cup non- or low-fat cottage cheese


1- Boil chicken breasts in a small amount of water until done. chop into small bite size pieces.

2-Cook carrots and choice of vegetable / in a small amount of water until tender but not mushy.

3-Add both with the rice and cottage cheese.

4-add some broth from the meat or carrots so its not too dry.
' Keep leftovers in the fridge.

Might also want to try adding :

1/4 cup low-fat cheddar cheese on top.
